Pork kebab

Here's a recipe for Pork Kebab that’s perfect for grilling or broiling:

Ingredients:

  • 500g pork tenderloin or pork shoulder, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons lemon juice or white vinegar
  • 2 garlic cloves, minced
  • 1 tablespoon fresh rosemary or thyme, chopped (or 1 teaspoon dried)
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground coriander
  • Salt and pepper, to taste
  • Wooden or metal skewers (if using wooden skewers, soak them in water for at least 30 minutes to prevent burning)

Instructions:

  1. Marinate the Pork:

    • In a large bowl, whisk together the olive oil, soy sauce, lemon juice or vinegar, minced garlic, rosemary or thyme, cumin, paprika, ground coriander, salt, and pepper.
    • Add the pork cubes to the marinade and toss until well coated. Cover and refrigerate for at least 1 hour, or up to overnight for more flavor.
  2. Prepare the Skewers:

    • Preheat your grill to medium-high heat. If using an oven or broiler, preheat it to 425°F (220°C).
    • Thread the marinated pork cubes onto the skewers, leaving a little space between each piece for even cooking.
  3. Grill or Broil the Kebabs:

    • Grilling: Place the skewers on the grill and cook for 10-15 minutes, turning occasionally, until the pork is cooked through and has a nice char. The internal temperature should reach 145°F (63°C).
    • Broiling: Place the skewers on a broiler pan or oven-safe rack. Broil for 10-15 minutes, turning once, until the pork is cooked through and has a slightly charred exterior.
  4. Serve:

    • Remove the kebabs from the grill or oven and let them rest for a few minutes.
    • Serve hot with your favorite accompaniments, such as rice, flatbread, tzatziki sauce, or a fresh salad.
